  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced potatoes in olive oil and spread them out on a baking sheet.
  3. Bake the potatoes for 20 minutes, or until they are crispy and golden brown.
  4. While the potatoes are baking, heat the remaining olive oil in a skillet over medium heat.
  5. Add the onion, bell pepper, and garlic to the skillet and sauté until the vegetables are soft.
