Cheddar Cheese and Potato Soup
A creamy and comforting soup made with cheddar cheese and potatoes.
Ingredients - Serves 6
- Green onions - 2, chopped (for garnish)
- Salt and pepper - To taste
- Cheddar cheese - 2 cups, shredded
- Milk - 2 cups
- Chicken broth - 4 cups
- Potatoes - 4 large, peeled and diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Butter - 4 tablespoons
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the diced potatoes and chicken broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the milk and shredded cheddar cheese. Cook over low heat until the cheese is melted and the soup is heated through.
- Season with salt and pepper to taste.
- Serve the soup hot, garnished with chopped green onions.
