Cheddar Cheese and Potato Soup

Let's Get Started

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
  3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
  4. Using an immersion blender or a regular blender, puree the soup until smooth.
  5. Return the soup to the pot and stir in the milk and shredded cheddar cheese. Cook over low heat until the cheese is melted and the soup is heated through.
