Cheddar Cheese and Broccoli Soup
A creamy and comforting soup made with cheddar cheese and fresh broccoli.
Ingredients - Serves 6
- Salt and pepper - To taste
- Cheddar cheese - 2 cups, shredded
- Milk - 2 cups
- All-purpose flour - 1/4 cup
- Chicken or vegetable broth - 4 cups
- Broccoli - 4 cups, chopped
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Butter - 4 tablespoons
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the chopped broccoli and cook for another 5 minutes.
- Sprinkle the flour over the vegetables and stir well to coat.
- Gradually pour in the chicken or vegetable broth, stirring constantly to avoid lumps.
- Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes, or until the broccoli is tender.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the milk and shredded cheddar cheese.
- Cook over low heat until the cheese is melted and the soup is heated through.
- Season with salt and pepper to taste.
