Cheddar Cheese and Broccoli Soup

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
  3. Add the chopped broccoli and cook for another 5 minutes.
  4. Sprinkle the flour over the vegetables and stir well to coat.
  5. Gradually pour in the chicken or vegetable broth, stirring constantly to avoid lumps.
  6. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes, or until the broccoli is tender.
  7. Using an immersion blender or a regular blender, puree the soup until smooth.
  8. Return the soup to the pot and stir in the milk and shredded cheddar cheese.
  9. Cook over low heat until the cheese is melted and the soup is heated through.
