Ingredients - Serves 6

Let's Get Started

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the beef and cook until browned. Remove from the pot and set aside.
  3. In the same pot, add the onion, garlic, and red bell pepper. Cook until the vegetables are softened.
  4. Add the potatoes, pumpkin, corn, green peas, cumin, paprika, salt, and pepper. Stir well to combine.
  5. Return the beef to the pot and add enough water to cover the ingredients.
  6. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the potatoes are tender.
  7. Remove from heat and sprinkle with fresh cilantro before serving.
  8. Serve hot and enjoy!
