Charquicán
Charquicán is a traditional Chilean dish made with beef, potatoes, pumpkin, corn, and other vegetables.
Ingredients - Serves 6
- Fresh cilantro - 2 tablespoons, chopped
- Vegetable oil - 2 tablespoons
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Green peas - 1/2 cup
- Red bell pepper - 1, diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Corn kernels - 1 cup
- Pumpkin - 1 cup, peeled and diced
- Potatoes - 4 medium, peeled and diced
- Beef - 1 pound, diced
Let's Get Started
- Heat the vegetable oil in a large pot over medium heat.
- Add the beef and cook until browned. Remove from the pot and set aside.
- In the same pot, add the onion, garlic, and red bell pepper. Cook until the vegetables are softened.
- Add the potatoes, pumpkin, corn, green peas, cumin, paprika, salt, and pepper. Stir well to combine.
- Return the beef to the pot and add enough water to cover the ingredients.
- Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the potatoes are tender.
- Remove from heat and sprinkle with fresh cilantro before serving.
- Serve hot and enjoy!
