Chapchae
Chapchae is a popular Korean dish made with stir-fried glass noodles, vegetables, and a savory sauce.
Ingredients - Serves 4
- Black pepper - To taste
- Salt - To taste
- Vegetable oil - 2 tablespoons
- Sesame seeds - 1 tablespoon
- Sugar - 1 tablespoon
- Soy sauce - 3 tablespoons
- Sesame oil - 2 tablespoons
- Garlic, minced - 3 cloves
- Mushrooms (shiitake or button), sliced - 100g
- Bell pepper, thinly sliced - 1 medium
- Onion, thinly sliced - 1 medium
- Spinach - 100g
- Carrots, julienned - 1 medium
- Beef (sirloin or ribeye), thinly sliced - 200g
- Dangmyeon (korean glass noodles) - 200g
Let's Get Started
- Cook the glass noodles according to package instructions. Drain and rinse with cold water. Set aside.
- In a bowl, marinate the beef with soy sauce, sugar, minced garlic, sesame oil, salt, and black pepper. Let it sit for 10 minutes.
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add the marinated beef and stir-fry until cooked through. Remove from the pan and set aside.
- In the same pan, add more vegetable oil if needed. Stir-fry the carrots, onion, bell pepper, and mushrooms until tender.
- Add the cooked glass noodles and spinach to the pan. Stir-fry for a few minutes until heated through.
- Add the cooked beef back to the pan and toss everything together.
- Drizzle with additional soy sauce and sesame oil if desired. Sprinkle with sesame seeds.
- Serve hot and enjoy!
