Chakalaka
Chakalaka is a spicy South African vegetable relish that is often served as a side dish.
Ingredients - Serves 6
- Vinegar - 2 tablespoons
- Sugar - 1 tablespoon
- Canned diced tomatoes - 1 can (400g)
- Canned baked beans - 1 can (400g)
- Salt and pepper - To taste
- Chili powder - 1/2 teaspoon
- Paprika - 1 teaspoon
- Curry powder - 2 teaspoons
- Tomatoes - 4, chopped
- Cabbage - 1/2 small head, shredded
- Carrots - 2, grated
- Bell peppers - 2, diced
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Oil - 2 tablespoons
Let's Get Started
- Heat the oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the bell peppers, carrots, and cabbage. Cook for 5 minutes, until the vegetables start to soften.
- Add the tomatoes, curry powder, paprika, chili powder, salt, and pepper. Stir well to combine.
- Cover the pot and simmer for 10 minutes, until the vegetables are tender.
- Add the baked beans, diced tomatoes, sugar, and vinegar. Stir well and simmer for another 10 minutes.
- Taste and adjust the seasoning if needed.
- Serve hot as a side dish with grilled meats or as a topping for pap (maize meal porridge).
