  1. Heat the oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  3. Add the bell peppers, carrots, and cabbage. Cook for 5 minutes, until the vegetables start to soften.
  4. Add the tomatoes, curry powder, paprika, chili powder, salt, and pepper. Stir well to combine.
  5. Cover the pot and simmer for 10 minutes, until the vegetables are tender.
  6. Add the baked beans, diced tomatoes, sugar, and vinegar. Stir well and simmer for another 10 minutes.
  7. Taste and adjust the seasoning if needed.
  8. Serve hot as a side dish with grilled meats or as a topping for pap (maize meal porridge).
