Cauliflower Couscous with Olives and Apricots
A delicious and healthy alternative to traditional couscous, this dish combines cauliflower rice with sweet apricots and tangy olives.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parsley - 1/4 cup, chopped
- Green olives - 1/2 cup, pitted and chopped
- Dried apricots - 1/2 cup, chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
- Cauliflower - 1 large head, riced
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
