Carrot and Pea Soup
This vibrant and nutritious carrot and pea soup is packed with flavor and perfect for a comforting meal.
Ingredients - Serves 6
- Fresh cilantro - For garnish
- Salt and pepper - To taste
- Turmeric - 1/2 teaspoon
- Cumin - 1 teaspoon
- Coconut milk - 1 cup
- Vegetable broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Peas - 2 cups, fresh or frozen
- Carrots - 4 large, peeled and chopped
Let's Get Started
- In a large pot, heat some olive oil over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the chopped carrots and cook for 5 minutes, stirring occasionally.
- Add the vegetable broth, peas, cumin, turmeric, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the carrots are tender.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Stir in the coconut milk and heat the soup for another 5 minutes.
- Taste and adjust the seasoning if needed.
- Serve the carrot and pea soup hot, garnished with fresh cilantro.
