Carrot and Pea Soup

  1. In a large pot, heat some olive oil over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. Add the chopped carrots and cook for 5 minutes, stirring occasionally.
  4. Add the vegetable broth, peas, cumin, turmeric, salt, and pepper. Bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the carrots are tender.
  6. Using an immersion blender or regular blender, puree the soup until smooth.
  7. Stir in the coconut milk and heat the soup for another 5 minutes.
  8. Taste and adjust the seasoning if needed.
  9. Serve the carrot and pea soup hot, garnished with fresh cilantro.
