Carrot and Chive Soup

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
  3. Add the chopped carrots and vegetable broth. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the carrots are tender.
