Carrot and Celery Soup
This creamy and flavorful carrot and celery soup is a healthy and comforting dish.
Ingredients - Serves 6
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Fresh thyme - 1 teaspoon
- Coconut milk - 1 cup
- Vegetable broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Celery - 4 stalks, chopped
- Carrots - 4 large, peeled and chopped
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the carrots, celery, vegetable broth, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the vegetables are tender.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the coconut milk. Heat over low heat until warmed through.
- Taste and adjust the seasoning if needed.
