- Bay leaves - 2
- Beef broth - 2 cups
- Red wine - 1 cup
- Garlic - 4 cloves, minced
- Carrots - 2, chopped
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Pork cheeks - 8 pieces
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the pork cheeks and brown on all sides. Remove from the pot and set aside.
- In the same pot, add the onion, carrots, and garlic. Cook until softened.
- Add the red wine to the pot, scraping the bottom to loosen any browned bits.
- Return the pork cheeks to the pot. Add the beef broth, bay leaves, thyme, salt, and pepper.
- Cover the pot and simmer for 2 hours, or until the pork cheeks are tender.
- Remove the bay leaves and thyme. Adjust the seasoning if necessary.
- Serve the Carrilleras de Cerdo with crusty bread or mashed potatoes.
