- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Bay leaf - 1
- Beef broth - 2 cups
- Red wine - 1 cup
- Carrot - 1, finely chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
- Pork cheeks - 4
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the pork cheeks and brown on all sides. Remove from the pot and set aside.
- In the same pot, add the onion, garlic, and carrot. Cook until softened.
- Add the red wine to the pot, scraping the bottom to loosen any browned bits.
- Return the pork cheeks to the pot, along with the beef broth, bay leaf, and thyme. Season with salt and pepper.
- Cover the pot and simmer for 2 hours, or until the pork cheeks are tender.
- Serve the Carrillada de Cerdo with some of the sauce and enjoy.
