  1. Heat the olive oil in a large pot over medium heat.
  2. Add the pork cheeks and brown on all sides. Remove from the pot and set aside.
  3. In the same pot, add the onion, garlic, and carrot. Cook until softened.
  4. Add the red wine to the pot, scraping the bottom to loosen any browned bits.
  5. Return the pork cheeks to the pot, along with the beef broth, bay leaf, and thyme. Season with salt and pepper.
  6. Cover the pot and simmer for 2 hours, or until the pork cheeks are tender.
  7. Serve the Carrillada de Cerdo with some of the sauce and enjoy.
