Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the cheeks and brown on all sides. Remove from the pot and set aside.
  3. In the same pot, add the onion, carrot, and garlic. Cook until softened.
  4. Return the cheeks to the pot and add the wine, broth, bay leaves, thyme, salt, and pepper.
  5. Bring to a boil, then reduce the heat to low, cover, and simmer for 3 hours, or until the cheeks are tender.
  6. Remove the bay leaves and thyme, and adjust the seasoning if necessary.
  7. Serve the carrillada with mashed potatoes or crusty bread to soak up the delicious sauce.
