Carrillada
Carrillada is a traditional Spanish dish made from pork or beef cheeks. Slowly braised in a rich wine sauce, this dish is incredibly tender and full of flavor.
Ingredients - Serves 4
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Bay leaves - 2
- Beef broth - 2 cups
- Red wine - 2 cups
- Garlic - 2 cloves, minced
- Carrot - 1, finely chopped
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
- Pork or beef cheeks - 4 pieces
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the cheeks and brown on all sides. Remove from the pot and set aside.
- In the same pot, add the onion, carrot, and garlic. Cook until softened.
- Return the cheeks to the pot and add the wine, broth, bay leaves, thyme, salt, and pepper.
- Bring to a boil, then reduce the heat to low, cover, and simmer for 3 hours, or until the cheeks are tender.
- Remove the bay leaves and thyme, and adjust the seasoning if necessary.
- Serve the carrillada with mashed potatoes or crusty bread to soak up the delicious sauce.
