Canelés
Canelés are a French pastry with a soft and tender custard center and a dark, thick caramelized crust. They are a specialty of the Bordeaux region of France.
Ingredients - Serves 12
- Beeswax - 50 g
- Sugar - 250 g
- Flour - 125 g
- Rum - 50 ml
- Eggs - 2
- Butter - 50 g
- Vanilla pod - 1
- Milk - 500 ml
Let's Get Started
- In a saucepan, bring the milk, vanilla pod, and butter to a boil.
- In a bowl, mix the eggs, rum, flour, and sugar.
- Gradually add the hot milk mixture to the bowl, stirring constantly.
- Let the batter rest for 24 hours in the refrigerator.
- Preheat the oven to 250°C.
- Melt the beeswax and use it to grease the canelé molds.
- Fill the molds with the batter and bake for 10 minutes.
- Lower the oven temperature to 180°C and bake for another 50 minutes.
- Let the canelés cool before removing them from the molds.
