Candied Sweet Potato Tacos
These delicious tacos feature candied sweet potatoes, black beans, and a tangy avocado-lime crema.
Ingredients - Serves 4
- Salt and pepper - To taste
- Cilantro - 1/4 cup, chopped
- Sour cream - 1/4 cup
- Lime - 1, juiced
- Avocado - 1, mashed
- Tortillas - 8 small
- Black beans - 1 can, drained and rinsed
- Cinnamon - 1 teaspoon
- Brown sugar - 1/4 cup
- Sweet potatoes - 2 large, peeled and diced
Let's Get Started
- Preheat the oven to 400°F.
- In a bowl, combine the diced sweet potatoes, brown sugar, cinnamon, salt, and pepper. Toss until the sweet potatoes are coated.
