Ingredients - Serves 6

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
  3. Add the diced potatoes and cook for another 5 minutes.
  4. Pour in the chicken or vegetable broth and bring to a boil.
  5. Reduce the heat to low and simmer for 15-20 minutes, or until the potatoes are tender.
  6. Using a potato masher or immersion blender, partially mash the potatoes to thicken the soup.
  7. Add the sliced kale and sausage to the pot and simmer for another 5 minutes, or until the kale is wilted and the sausage is heated through.
  8. Season with salt and pepper to taste.
  9. Serve hot and enjoy!
