Caldo Verde
Caldo Verde is a traditional Portuguese soup made with kale, potatoes, and sausage.
Ingredients - Serves 6
- Salt and pepper - To taste
- Chorizo or linguica sausage - 8 ounces, sliced
- Kale - 1 bunch, stems removed and leaves thinly sliced
- Chicken or vegetable broth - 6 cups
- Potatoes - 4 medium, peeled and diced
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
- Add the diced potatoes and cook for another 5 minutes.
- Pour in the chicken or vegetable broth and bring to a boil.
- Reduce the heat to low and simmer for 15-20 minutes, or until the potatoes are tender.
- Using a potato masher or immersion blender, partially mash the potatoes to thicken the soup.
- Add the sliced kale and sausage to the pot and simmer for another 5 minutes, or until the kale is wilted and the sausage is heated through.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
