Caldo de Pollo is a traditional Mexican chicken soup packed with flavor and hearty ingredients.
Ingredients - Serves 6
- Chicken broth - 8 cups
- Bay leaf - 1
- Cumin - 1 teaspoon
- Pepper - To taste
- Salt - To taste
- Lime - 1, juiced
- Cilantro - 1/4 cup, chopped
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Celery - 2 stalks, sliced
- Potatoes - 2 medium, diced
- Carrots - 2 large, sliced
- Chicken - 1 whole, cut into pieces
Let's Get Started
- In a large pot, bring the chicken broth to a boil.
- Add the chicken pieces, carrots, potatoes, celery, onion, garlic, cilantro, lime juice, salt, pepper, cumin, and bay leaf.
- Reduce the heat to low and simmer for 45 minutes, or until the chicken is cooked through and the vegetables are tender.
- Remove the chicken pieces from the pot and shred the meat using two forks.
- Return the shredded chicken to the pot and simmer for an additional 10 minutes.
