Ingredients - Serves 4

Let's Get Started

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente.
  2. While the pasta is cooking, grate the Pecorino Romano cheese and set it aside.
  3. Reserve 2 cups of the pasta water, then drain the pasta.
  4. In the same pot, melt the butter over medium heat. Add the black pepper and cook for 1 minute.
  5. Add 1 1/2 cups of the reserved pasta water to the pot and bring it to a simmer.
  6. Reduce the heat to low and add the pasta, stirring and tossing until it is fully coated.
  7. Add the cheese and continue to stir and toss until the cheese has melted and the sauce is creamy. If needed, add more pasta water to achieve the desired consistency.
  8. Season with salt to taste, then serve the pasta immediately.
