Ingredients - Serves 4
- Unsalted butter - 3 tablespoons
- Salt - To taste
- Freshly ground black pepper - 2 teaspoons
- Pecorino romano cheese - 1 1/2 cups, finely grated
- Spaghetti - 400 grams
Let's Get Started
- Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente.
- While the pasta is cooking, grate the Pecorino Romano cheese and set it aside.
- Reserve 2 cups of the pasta water, then drain the pasta.
- In the same pot, melt the butter over medium heat. Add the black pepper and cook for 1 minute.
- Add 1 1/2 cups of the reserved pasta water to the pot and bring it to a simmer.
- Reduce the heat to low and add the pasta, stirring and tossing until it is fully coated.
- Add the cheese and continue to stir and toss until the cheese has melted and the sauce is creamy. If needed, add more pasta water to achieve the desired consistency.
- Season with salt to taste, then serve the pasta immediately.
