Cajun Tempeh Pasta
A spicy and flavorful vegan pasta dish with tempeh and a homemade cajun seasoning.
Ingredients - Serves 4
- Salt and pepper - To taste
- Pasta - 8 ounces
- Vegan cream cheese - 1/2 cup
- Diced tomatoes - 1 can
- Cajun seasoning - 2 tablespoons
- Garlic - 3 cloves, minced
- Bell peppers - 2, diced
- Onion - 1, diced
- Olive oil - 2 tablespoons
- Tempeh - 8 ounces, cubed
Let's Get Started
- Cook the pasta according to the package instructions. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the tempeh and cook until browned on all sides.
- Add the onion, bell peppers, and garlic to the skillet. Cook until the vegetables are softened.
- Stir in the cajun seasoning and diced tomatoes. Bring to a simmer.
- Reduce the heat to low and stir in the vegan cream cheese until melted and smooth.
- Add the cooked pasta to the skillet and toss to combine. Season with salt and pepper to taste.
