Cajun Spiced Tempeh Po' Boys
This vegan take on the classic Louisiana sandwich is packed with spicy tempeh and tangy coleslaw.
Ingredients - Serves 4
- Pickle slices - To taste
- Tomato - 1, sliced
- French bread - 1 loaf, cut into 4 pieces
- Carrot - 1, shredded
- Cabbage - 2 cups, shredded
- Hot sauce - 1 tablespoon
- Dijon mustard - 1 tablespoon
- Vegan mayonnaise - 1/2 cup
- Olive oil - 2 tablespoons
- Cajun seasoning - 2 tablespoons
- Tempeh - 8 ounces, sliced
Let's Get Started
- Rub the tempeh slices with the Cajun seasoning.
- Heat the olive oil in a skillet over medium heat. Add the tempeh and cook until browned on both sides, about 5 minutes per side.
