Cactus Salad
This refreshing cactus salad is made with fresh nopales (cactus paddles), tomatoes, onions, and cilantro.
Ingredients - Serves 4
- Black pepper - To taste
- Salt - To taste
- Olive oil - 1 tablespoon
- Lime juice - 2 tablespoons
- Cilantro - 1/4 cup, chopped
- Red onion - 1/2 small, thinly sliced
- Tomatoes - 2 medium, diced
- Nopales (cactus paddles) - 2 cups, cleaned and diced
Let's Get Started
- Bring a pot of water to a boil. Add the diced nopales and cook for 5 minutes. Drain and rinse with cold water.
- In a large bowl, combine the cooked nopales, diced tomatoes, sliced red onion, and chopped cilantro.
- In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
- Pour the dressing over the salad and toss to combine.
- Refrigerate for at least 1 hour to allow the flavors to meld.
- Serve chilled and enjoy!
