Cabbage and Cornbread Casserole
This hearty and comforting casserole combines tender cabbage with savory cornbread for a delicious and satisfying meal.
Ingredients - Serves 6
- Green onions - 2, sliced
- Cheddar cheese - 1 cup, shredded
- Salt and pepper - To taste
- Dried oregano - 1 teaspoon
- Tomato sauce - 1 can (8 ounces)
- Ground beef - 1 pound
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Cornbread mix - 1 box
- Cabbage - 1 medium head, shredded
Let's Get Started
- Preheat the oven to 375°F.
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
- Stir in the tomato sauce, dried oregano, salt, and pepper. Simmer for 5 minutes.
- In a separate pot, bring water to a boil and cook the shredded cabbage for 5 minutes. Drain well.
- Prepare the cornbread mix according to package instructions.
- In a greased casserole dish, layer half of the cooked cabbage, followed by half of the ground beef mixture.
- Repeat the layers with the remaining cabbage and ground beef mixture.
- Pour the prepared cornbread batter over the top of the casserole.
- Sprinkle the shredded cheddar cheese on top.
- Bake for 25-30 minutes, or until the cornbread is golden and cooked through.
- Garnish with sliced green onions before serving.
