Butter Poached Lobster with Risotto

Ingredients - Serves 4

Let's Get Started

  1. Melt the butter in a large skillet over medium heat.
  2. Add the lobster tails and cook until they are bright red and the meat is opaque, about 10 minutes. Remove the lobster from the skillet and set aside.
  3. In the same skillet, add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  4. Add the rice and cook, stirring constantly, until the rice is lightly toasted, about 2 minutes.
  5. Add the wine and cook, stirring constantly, until the wine is fully absorbed.
  6. Add the chicken broth, 1/2 cup at a time, stirring constantly and waiting for the broth to be absorbed before adding more.
  7. When all the broth has been added and the rice is tender, stir in the Parmesan cheese and season with salt and pepper.
  8. Serve the risotto topped with the butter poached lobster.
