Butter Poached Lobster with Risotto
This luxurious dish features tender lobster poached in butter, served over creamy risotto.
Ingredients - Serves 4
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Parmesan cheese - 1/2 cup, grated
- Chicken broth - 4 cups
- White wine - 1/2 cup
- Arborio rice - 1 cup
- Unsalted butter - 1 cup
- Lobster tails - 4
Let's Get Started
- Melt the butter in a large skillet over medium heat.
- Add the lobster tails and cook until they are bright red and the meat is opaque, about 10 minutes. Remove the lobster from the skillet and set aside.
- In the same skillet, add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the rice and cook, stirring constantly, until the rice is lightly toasted, about 2 minutes.
- Add the wine and cook, stirring constantly, until the wine is fully absorbed.
- Add the chicken broth, 1/2 cup at a time, stirring constantly and waiting for the broth to be absorbed before adding more.
- When all the broth has been added and the rice is tender, stir in the Parmesan cheese and season with salt and pepper.
- Serve the risotto topped with the butter poached lobster.
