- Extra virgin olive oil - 100 ml
- Pecorino cheese - 100 grams, grated
- Basil - A bunch

- Almonds - 100 grams, blanched
- Cherry tomatoes - 500 grams
- Busiate pasta - 400 grams
Let's Get Started
- Bring a large pot of salted water to a boil.
- While the water is heating, make the pesto. In a food processor, combine the tomatoes, almonds, garlic, basil, and cheese. Pulse until finely chopped.
- With the motor running, slowly drizzle in the olive oil until the pesto is smooth.
- Cook the busiate pasta in the boiling water until al dente, about 8-10 minutes.
- Drain the pasta, reserving a cup of the pasta water.
- Toss the pasta with the pesto, adding pasta water as needed to loosen the sauce.
- Serve the pasta hot, garnished with additional grated Pecorino cheese.
