Brötchen

Ingredients - Serves 12

Let's Get Started

  1. In a large bowl, combine the warm water, yeast, and sugar. Let sit for 5 minutes until the yeast is foamy.
  2. Add the salt, oil, and 2 cups of the flour to the yeast mixture. Stir until well combined.
  3. Gradually add the remaining flour, 1/2 cup at a time, until the dough pulls away from the sides of the bowl.
  4. Turn the dough out onto a floured surface and knead until smooth and elastic, about 10 minutes.
  5. Place the dough in a greased bowl, cover with a clean kitchen towel, and let rise in a warm place until doubled in size, about 1 hour.
  6. Punch down the dough and divide into 12 equal pieces. Shape each piece into a round roll and place on a greased baking sheet. Cover and let rise until doubled in size, about 30 minutes.
  7. Preheat the oven to 425°F (220°C). Brush the rolls with the egg white and sprinkle with sesame seeds or poppy seeds if desired.
  8. Bake for 15-20 minutes, or until the rolls are golden brown. Cool on a wire rack.
