Brötchen
Brötchen, also known as German rolls, are crispy on the outside and soft on the inside. Perfect for sandwiches or as a side to any meal.
Ingredients - Serves 12
- Sesame seeds or poppy seeds - Optional, for topping
- Egg white - 1, for glazing
- All-purpose flour - 3 1/2 cups
- Vegetable oil - 1 tablespoon
- Salt - 1 teaspoon
- Sugar - 1 teaspoon
- Active dry yeast - 1 tablespoon
- Warm water - 1 1/4 cups
Let's Get Started
- In a large bowl, combine the warm water, yeast, and sugar. Let sit for 5 minutes until the yeast is foamy.
- Add the salt, oil, and 2 cups of the flour to the yeast mixture. Stir until well combined.
- Gradually add the remaining flour, 1/2 cup at a time, until the dough pulls away from the sides of the bowl.
- Turn the dough out onto a floured surface and knead until smooth and elastic, about 10 minutes.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let rise in a warm place until doubled in size, about 1 hour.
- Punch down the dough and divide into 12 equal pieces. Shape each piece into a round roll and place on a greased baking sheet. Cover and let rise until doubled in size, about 30 minutes.
- Preheat the oven to 425°F (220°C). Brush the rolls with the egg white and sprinkle with sesame seeds or poppy seeds if desired.
- Bake for 15-20 minutes, or until the rolls are golden brown. Cool on a wire rack.
