Cereal Prawn
Cereal prawn is a popular Singaporean dish made with fresh prawns coated in a crispy cereal mixture.
Ingredients - Serves 4
- Egg white - 1
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Sugar - 1 tablespoon
- Garlic - 3 cloves, minced
- Chili padi (bird's eye chili) - 3, sliced
- Curry leaves - 10 leaves
- Butter - 2 tablespoons
- Cornflakes - 1 cup
- Prawns - 500 grams
Let's Get Started
- Clean and devein the prawns, leaving the heads and tails intact.
- Crush the cornflakes into small pieces.
- Heat butter in a pan over medium heat.
- Add curry leaves, chili padi, and minced garlic. Sauté until fragrant.
- Add the crushed cornflakes and stir-fry until crispy and golden brown. Set aside.
- In a separate bowl, whisk the egg white until frothy.
- Dip each prawn into the egg white, then coat it with the cereal mixture.
- Heat oil in a deep pan or wok over high heat.
- Fry the prawns in batches until they turn golden brown and crispy. Drain on paper towels.
- Sprinkle sugar, salt, and black pepper over the fried prawns.
- Serve hot and enjoy!
