Ingredients - Serves 4

  1. Clean and devein the prawns, leaving the heads and tails intact.
  2. Crush the cornflakes into small pieces.
  3. Heat butter in a pan over medium heat.
  4. Add curry leaves, chili padi, and minced garlic. Sauté until fragrant.
  5. Add the crushed cornflakes and stir-fry until crispy and golden brown. Set aside.
  6. In a separate bowl, whisk the egg white until frothy.
  7. Dip each prawn into the egg white, then coat it with the cereal mixture.
  8. Heat oil in a deep pan or wok over high heat.
  9. Fry the prawns in batches until they turn golden brown and crispy. Drain on paper towels.
  10. Sprinkle sugar, salt, and black pepper over the fried prawns.
  11. Serve hot and enjoy!
