Brown Rice and Vegetable Pilaf
A healthy and delicious dish packed with brown rice and a variety of vegetables. Perfect as a side dish or a light main course.
Ingredients - Serves 4
- Salt and pepper - To taste
- Vegetable broth - 2 cups
- Green peas - 1/2 cup, frozen
- Red bell pepper - 1, finely chopped
- Carrot - 1, finely chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
- Brown rice - 1 cup
Let's Get Started
- Rinse the brown rice under cold water until the water runs clear.
- Heat the olive oil in a large pan over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the carrot and bell pepper and cook for another 5 minutes.
- Add the rice to the pan and stir to coat in the oil and vegetables.
- Add the vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 40 minutes.
- Add the peas, cover, and cook for another 5 minutes.
- Season with salt and pepper to taste before serving.
