Brown Rice and Vegetable Pilaf

Ingredients - Serves 4

Let's Get Started

  1. Rinse the brown rice under cold water until the water runs clear.
  2. Heat the olive oil in a large pan over medium heat.
  3. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  4. Add the carrot and bell pepper and cook for another 5 minutes.
  5. Add the rice to the pan and stir to coat in the oil and vegetables.
  6. Add the vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 40 minutes.
  7. Add the peas, cover, and cook for another 5 minutes.
  8. Season with salt and pepper to taste before serving.
