Broccoli Chowder
This creamy and comforting broccoli chowder is packed with nutritious broccoli florets and hearty potatoes.
Ingredients - Serves 6
- Green onions - 2 tablespoons, chopped
- Cheddar cheese - 1 cup, shredded
- Salt and pepper - To taste
- All-purpose flour - 2 tablespoons
- Milk - 1 cup
- Vegetable broth - 4 cups
- Broccoli - 4 cups, florets
- Potatoes - 2 medium, peeled and diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Butter - 2 tablespoons
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the diced potatoes and broccoli florets to the pot. Stir to combine.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
- In a separate bowl, whisk together the milk and all-purpose flour until smooth.

- Season with salt and pepper to taste.
- Remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy.
- Serve the broccoli chowder hot, garnished with chopped green onions.
