Broccoli and Cheese Stuffed Potatoes

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 400°F.
  2. Wash the potatoes and prick them with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until tender.
  3. While the potatoes are baking, steam the broccoli until tender.
  4. Cut a slit in the top of each potato and carefully scoop out the flesh, leaving a thin shell.
  5. In a bowl, mash the potato flesh with butter, sour cream, salt, and pepper.
  6. Add the steamed broccoli and shredded cheddar cheese to the mashed potatoes. Mix well.
  7. Spoon the broccoli and cheese mixture back into the potato shells.
  8. Place the stuffed potatoes back on the baking sheet and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Serve hot and enjoy!
