Broccoli and Cheese Stuffed Potatoes
These delicious stuffed potatoes are filled with a creamy broccoli and cheese mixture.
Ingredients - Serves 4
- Salt and pepper - To taste
- Butter - 2 tablespoons
- Sour cream - 1/2 cup
- Cheddar cheese - 1 cup, shredded
- Broccoli - 2 cups, chopped
- Potatoes - 4 large
Let's Get Started
- Preheat the oven to 400°F.
- Wash the potatoes and prick them with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until tender.
- While the potatoes are baking, steam the broccoli until tender.
- Cut a slit in the top of each potato and carefully scoop out the flesh, leaving a thin shell.
- In a bowl, mash the potato flesh with butter, sour cream, salt, and pepper.
- Add the steamed broccoli and shredded cheddar cheese to the mashed potatoes. Mix well.
- Spoon the broccoli and cheese mixture back into the potato shells.
- Place the stuffed potatoes back on the baking sheet and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy!
