Broccoli and Cheddar Soup
A creamy and comforting soup made with fresh broccoli and melted cheddar cheese.
Ingredients - Serves 6
- Salt and pepper - To taste
- Cheddar cheese - 2 cups, shredded
- All-purpose flour - 1/4 cup
- Milk - 1 cup
- Chicken or vegetable broth - 4 cups
- Broccoli - 4 cups, chopped
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Butter - 4 tablespoons
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the chopped broccoli and cook for another 5 minutes.
- In a separate bowl, whisk together the flour and milk until smooth.
- Pour the flour and milk mixture into the pot with the broccoli and stir well.
- Add the chicken or vegetable broth and bring to a boil.
- Reduce the heat and simmer for 15-20 minutes, or until the broccoli is tender.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the shredded cheddar cheese until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
