Brioches
A rich and tender French bread that is high in egg and butter content.
Ingredients - Serves 12
- Egg yolk - 1, for glazing
- Unsalted butter - 10 tablespoons, softened
- Eggs - 4
- Salt - 1 teaspoon
- Sugar - 1/3 cup
- All-purpose flour - 3 1/2 cups
- Active dry yeast - 2 1/4 teaspoons
- Milk - 1/3 cup
Let's Get Started
- Warm the milk until it is lukewarm and add the yeast. Let it sit for 5 minutes until it becomes frothy.
- In a large bowl, combine the flour, sugar, and salt. Make a well in the center and add the yeast mixture and eggs. Mix until a dough forms.
- Add the softened butter and knead the dough until it is smooth and elastic.
- Cover the dough and let it rise in a warm place until it doubles in size, about 1-2 hours.
- Punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place them in a greased muffin tin.
- Cover the tin and let the dough rise again until it doubles in size, about 1 hour.
- Preheat the oven to 375°F (190°C).
- Brush the tops of the brioches with the egg yolk. Bake for 20-25 minutes, or until they are golden brown.
- Let the brioches cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
