Ingredients - Serves 12

Let's Get Started

  1. Warm the milk until it is lukewarm and add the yeast. Let it sit for 5 minutes until it becomes frothy.
  2. In a large bowl, combine the flour, sugar, and salt. Make a well in the center and add the yeast mixture and eggs. Mix until a dough forms.
  3. Add the softened butter and knead the dough until it is smooth and elastic.
  4. Cover the dough and let it rise in a warm place until it doubles in size, about 1-2 hours.
  5. Punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place them in a greased muffin tin.
  6. Cover the tin and let the dough rise again until it doubles in size, about 1 hour.
  7. Preheat the oven to 375°F (190°C).
  8. Brush the tops of the brioches with the egg yolk. Bake for 20-25 minutes, or until they are golden brown.
  9. Let the brioches cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
