Boniatillo
Boniatillo is a traditional Cuban sweet potato dessert made with sweet potatoes, sugar, cinnamon, and vanilla.
Ingredients - Serves 6
- Water - 1 cup
- Vanilla extract - 1 teaspoon
- Cinnamon - 1 teaspoon
- Sugar - 1 cup
- Sweet potatoes - 2 pounds, peeled and cubed

- Place the sweet potatoes in a large pot and cover with water. Bring to a boil and cook until the sweet potatoes are tender, about 15-20 minutes.
- Drain the sweet potatoes and mash them until smooth.
- In a separate saucepan, combine the sugar, cinnamon, vanilla extract, and water. Bring to a boil and cook until the sugar has dissolved.
- Add the mashed sweet potatoes to the saucepan and stir until well combined.
- Reduce the heat to low and simmer for 20-25 minutes, stirring occasionally, until the mixture thickens.
- Remove from heat and let cool before serving.
- Serve the boniatillo warm or chilled, garnished with a sprinkle of cinnamon if desired.
