  1. Place the sweet potatoes in a large pot and cover with water. Bring to a boil and cook until the sweet potatoes are tender, about 15-20 minutes.
  2. Drain the sweet potatoes and mash them until smooth.
  3. In a separate saucepan, combine the sugar, cinnamon, vanilla extract, and water. Bring to a boil and cook until the sugar has dissolved.
  4. Add the mashed sweet potatoes to the saucepan and stir until well combined.
  5. Reduce the heat to low and simmer for 20-25 minutes, stirring occasionally, until the mixture thickens.
  6. Remove from heat and let cool before serving.
  7. Serve the boniatillo warm or chilled, garnished with a sprinkle of cinnamon if desired.
