Bolo de Rolo
Bolo de Rolo is a traditional Brazilian cake made with thin layers of rolled cake filled with guava paste.
Ingredients - Serves 10
- Powdered sugar - For dusting
- Guava paste - 1 cup, thinly sliced
- Vanilla extract - 1 teaspoon
- Butter - 1/2 cup, melted
- Milk - 1/2 cup
- Eggs - 4
- Granulated sugar - 1 cup
- All-purpose flour - 1 cup
Let's Get Started
- Preheat the oven to 350°F (175°C). Grease and flour a jelly roll pan.
- In a mixing bowl, whisk together the flour and sugar.
- Add the eggs, milk, melted butter, and vanilla extract. Mix until well combined.
- Pour the batter into the prepared jelly roll pan, spreading it evenly.
- Bake for 12-15 minutes, or until the cake is lightly golden and springs back when touched.
- Remove the cake from the oven and let it cool for a few minutes.
- Place a clean kitchen towel on a flat surface and dust it with powdered sugar.
- Carefully invert the cake onto the towel and gently peel off the parchment paper.
- Spread the guava paste evenly over the cake.
- Starting from one end, carefully roll the cake tightly using the towel to help you.
- Transfer the rolled cake to a serving platter and dust with powdered sugar.
- Slice and serve the Bolo de Rolo.
