Bok Choy and Salmon Salad
This refreshing salad combines the flavors of bok choy, grilled salmon, and a tangy Asian-inspired dressing.

- Salt and pepper - To taste
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Honey - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Soy sauce - 2 tablespoons
- Lime - 1, juiced
- Sesame seeds - 1 tablespoon
- Green onions - 4, sliced
- Cucumber - 1, thinly sliced
- Red bell pepper - 1, thinly sliced
- Carrots - 1, julienned
- Bok choy - 4 cups, chopped
- Salmon fillets - 2
Let's Get Started
- Preheat the grill to medium-high heat.
- Season the salmon fillets with salt and pepper.
- Grill the salmon for 4-5 minutes per side, or until cooked through. Set aside to cool.
- In a large bowl, combine the bok choy, carrots, red bell pepper, cucumber, and green onions.

- Pour the dressing over the salad and toss to coat.
