Bok Choy and Pesto Pasta
This delicious pasta dish combines the freshness of bok choy with the flavors of homemade pesto.
Ingredients - Serves 2
- Salt and pepper - To taste
- Olive oil - 1/4 cup
- Parmesan cheese - 1/2 cup, grated
- Pine nuts - 1/4 cup
- Garlic - 2 cloves
- Basil leaves - 1 cup
- Bok choy - 2 heads, chopped
- Pasta - 8 ounces
Let's Get Started
- Cook the pasta according to package instructions. Drain and set aside.
- In a food processor, combine the basil leaves, garlic, pine nuts, Parmesan cheese, olive oil, salt, and pepper. Blend until smooth to make the pesto sauce.
- Heat a large skillet over medium heat. Add the bok choy and cook until wilted, about 5 minutes.
- Add the cooked pasta to the skillet with the bok choy. Pour in the pesto sauce and toss to coat the pasta and bok choy evenly.
- Cook for an additional 2-3 minutes, until heated through.
