Bo Kho
Bo Kho is a flavorful Vietnamese beef stew made with tender beef, aromatic spices, and hearty vegetables.
Ingredients - Serves 6
- Lime wedges - For serving
- Fresh cilantro - For garnish
- Salt and pepper - To taste
- Bay leaves - 2
- Cloves - 4
- Cinnamon stick - 1
- Star anise - 2 pods
- Beef broth - 4 cups
- Soy sauce - 2 tablespoons
- Fish sauce - 3 tablespoons
- Tomato paste - 2 tablespoons
- Potatoes - 2 medium, cubed
- Carrots - 3 medium, sliced
- Lemongrass - 2 stalks, bruised
- Ginger - 1 tablespoon, grated
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Beef chuck roast - 2 pounds, cut into chunks
Let's Get Started
- In a large pot, heat some oil over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Cook until fragrant.
- Add the beef chunks and brown them on all sides.
- Stir in the tomato paste, fish sauce, and soy sauce.
- Add the lemongrass, star anise, cinnamon stick, cloves, bay leaves, salt, and pepper.
- Pour in the beef broth and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 2 hours or until the beef is tender.
- Add the sliced carrots and cubed potatoes. Cook for an additional 30 minutes or until the vegetables are cooked through.
- Remove the lemongrass stalks, star anise pods, cinnamon stick, cloves, and bay leaves.
- Serve the Bo Kho hot, garnished with fresh cilantro and accompanied by lime wedges.
