Ingredients - Serves 6

Let's Get Started

  1. In a large pot, heat some oil over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Cook until fragrant.
  3. Add the beef chunks and brown them on all sides.
  4. Stir in the tomato paste, fish sauce, and soy sauce.
  5. Add the lemongrass, star anise, cinnamon stick, cloves, bay leaves, salt, and pepper.
  6. Pour in the beef broth and bring to a boil.
  7. Reduce the heat to low, cover the pot, and simmer for about 2 hours or until the beef is tender.
  8. Add the sliced carrots and cubed potatoes. Cook for an additional 30 minutes or until the vegetables are cooked through.
  9. Remove the lemongrass stalks, star anise pods, cinnamon stick, cloves, and bay leaves.
  10. Serve the Bo Kho hot, garnished with fresh cilantro and accompanied by lime wedges.
