Blue Mussel
This delicious blue mussel pasta is made with fresh mussels, garlic, white wine, and linguine.
Ingredients - Serves 2
- Salt and pepper - To taste
- Fresh parsley - 1/4 cup, chopped
- Cherry tomatoes - 1 cup, halved
- White wine - 1 cup
- Garlic - 4 cloves, minced
- Olive oil - 2 tablespoons
- Blue mussels - 2 pounds, cleaned and debearded
- Linguine - 8 ounces
Let's Get Started
- Cook the linguine according to package instructions until al dente. Drain and set aside.
- Heat the olive oil in a large pot over medium heat.
- Add the minced garlic and cook for 1 minute, until fragrant.
- Add the white wine and bring to a simmer.
- Add the cleaned mussels to the pot and cover with a lid. Cook for 5-7 minutes, or until the mussels have opened.
- Remove any unopened mussels and discard.
- Add the cooked linguine, cherry tomatoes, and chopped parsley to the pot. Toss to combine.
- Season with salt and pepper to taste.
- Serve the blue mussel pasta hot, garnished with additional parsley if desired.
