Blini
Blini are thin Russian pancakes made with buckwheat flour and served with various toppings.
Ingredients - Serves 4
- Lemon wedges - For serving
- Fresh dill - 2 tablespoons, chopped
- Smoked salmon - 4 ounces
- Sour cream - 1/2 cup
- Vegetable oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Milk - 1 cup
- Egg - 1
- All-purpose flour - 1/2 cup
- Buckwheat flour - 1 cup
Let's Get Started
- In a mixing bowl, combine the buckwheat flour, all-purpose flour, egg, milk, and salt. Whisk until smooth.
- Heat a non-stick skillet or griddle over medium heat and brush with vegetable oil.
- Pour about 1/4 cup of the batter onto the skillet and spread it into a thin circle.
- Cook for about 2 minutes, or until the edges start to brown. Flip the blini and cook for another 1-2 minutes.
- Transfer the cooked blini to a plate and repeat with the remaining batter.
- Serve the blini warm, topped with a dollop of sour cream, a slice of smoked salmon, and a sprinkle of fresh dill.
- Garnish with lemon wedges and serve immediately.
