Black Sesame Macarons
These black sesame macarons are a unique twist on the classic French dessert. They have a nutty, slightly sweet flavor and a delicate, crisp shell.
Ingredients - Serves 24
- Powdered sugar - 1 cup
- Butter - 1/4 cup, softened
- Black sesame paste - 1/2 cup
- Cream of tartar - 1/4 teaspoon
- Granulated sugar - 1/4 cup
- Egg whites - 4 large
- Black sesame seeds - 1/4 cup, toasted and ground
- Powdered sugar - 1 3/4 cups
- Almond flour - 1 cup
Let's Get Started
- Preheat the oven to 300°F and line two baking sheets with parchment paper.
- In a food processor, combine the almond flour, powdered sugar, and ground black sesame seeds. Process until fine.
- In a large bowl, beat the egg whites until foamy. Gradually add the granulated sugar and cream of tartar, beating until stiff peaks form.
- Fold the almond flour mixture into the egg whites until the batter is smooth and shiny.
- Transfer the batter to a piping bag fitted with a round tip. Pipe 1-inch circles onto the prepared baking sheets.
- Let the macarons sit at room temperature for 30 minutes to develop a skin.
- Bake for 15 minutes, or until the macarons are crisp and firm. Let cool completely on the baking sheets.
- In a medium bowl, beat the black sesame paste, butter, and powdered sugar until smooth. Transfer to a piping bag fitted with a round tip.
- Pipe a dollop of filling onto the flat side of half of the macarons. Top with the remaining macarons, flat side down, to form sandwiches.
