Bitterballen
Bitterballen are a popular Dutch snack made with a creamy beef ragout, coated in breadcrumbs, and deep-fried until crispy.
Ingredients - Serves 6
- Vegetable oil - For frying
- Breadcrumbs - 2 cups
- Egg - 2, beaten
- Salt and pepper - To taste
- Nutmeg - 1/4 teaspoon
- Milk - 1 cup
- All-purpose flour - 1/4 cup
- Beef stew meat - 1 pound, cooked and shredded
- Beef broth - 2 cups
- Onion - 1, finely chopped
- Butter - 4 tablespoons
Let's Get Started
- In a large pan, melt the butter over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Add the shredded beef stew meat and cook for another 2 minutes.
- Sprinkle the flour over the mixture and stir well to combine.
- Gradually pour in the beef broth and milk, stirring constantly until the mixture thickens.
- Season with nutmeg, salt, and pepper to taste.
- Transfer the mixture to a shallow dish and refrigerate for at least 2 hours, or until firm.
- Once the mixture is firm, shape it into small balls, about 1 inch in diameter.
- Dip each ball into the beaten eggs, then roll in breadcrumbs to coat.
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Fry the bitterballen in batches until golden brown and crispy, about 3-4 minutes per batch.
- Remove from the oil and drain on paper towels.
- Serve hot with mustard or mayonnaise for dipping.
