Biscotti Del Lagaccio
Biscotti del Lagaccio are traditional Italian cookies from Genoa. They are sweet, crunchy, and perfect for dipping in coffee or wine.
Ingredients - Serves 24
- Almonds - 1 cup, chopped
- Vanilla extract - 1 teaspoon
- Eggs - 3
- Salt - 1/4 teaspoon
- Baking powder - 1 teaspoon
- Sugar - 1 cup
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs and vanilla extract together. Gradually add the egg mixture to the flour mixture, stirring until a dough forms.
- Fold in the chopped almonds.
- Divide the dough in half and shape each half into a log. Place the logs on the prepared baking sheet.
- Bake for 25 minutes, or until the logs are lightly browned.
- Remove the logs from the oven and let them cool for 10 minutes. Then, slice the logs into 1/2-inch thick slices.
- Return the slices to the baking sheet and bake for an additional 15 minutes, or until they are golden and crispy.
- Let the biscotti cool completely before serving.
