Ingredients - Serves 12

Let's Get Started

  1. In a small saucepan, heat the milk until it bubbles, then remove from heat. Let cool until lukewarm.
  2. In a large mixing bowl, combine the milk, yeast, sugar, salt, eggs, butter, and 2 cups of the flour. Mix thoroughly.
  3. Add the remaining flour, 1/2 cup at a time, stirring well after each addition.
  4. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  5. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  6. Deflate the dough and turn it out onto a lightly floured surface. Roll the dough out to 1/2 inch thick and cut with a floured doughnut cutter.
  7. Let doughnuts sit out to rise until double, about 30 minutes.
  8. Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Slide doughnuts into the hot oil using a wide spatula.
  9. Turn doughnuts over as they rise to the surface. Fry doughnuts on each side until golden brown. Remove from hot oil, to drain on a wire rack.
  10. Inject jam into the doughnuts using a pastry bag and a narrow nozzle, or cut a slit into the side and spoon the jam in.
  11. Dust with powdered sugar before serving.
