Berliner Pfannkuchen
Berliner Pfannkuchen is a traditional German pastry similar to a doughnut with no central hole, filled with jam or marmalade and usually icing, powdered sugar or conventional sugar on top.
Ingredients - Serves 12
- Powdered sugar - For dusting
- Jam or marmalade - 1 cup
- All-purpose flour - 4 cups
- Butter - 1/3 cup, melted
- Eggs - 2
- Salt - 1/2 teaspoon
- Sugar - 1/4 cup
- Active dry yeast - 1 package
- Milk - 1 cup
Let's Get Started
- In a small saucepan, heat the milk until it bubbles, then remove from heat. Let cool until lukewarm.
- In a large mixing bowl, combine the milk, yeast, sugar, salt, eggs, butter, and 2 cups of the flour. Mix thoroughly.
- Add the remaining flour, 1/2 cup at a time, stirring well after each addition.
- When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
- Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
- Deflate the dough and turn it out onto a lightly floured surface. Roll the dough out to 1/2 inch thick and cut with a floured doughnut cutter.
- Let doughnuts sit out to rise until double, about 30 minutes.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Slide doughnuts into the hot oil using a wide spatula.
- Turn doughnuts over as they rise to the surface. Fry doughnuts on each side until golden brown. Remove from hot oil, to drain on a wire rack.
- Inject jam into the doughnuts using a pastry bag and a narrow nozzle, or cut a slit into the side and spoon the jam in.
- Dust with powdered sugar before serving.
