  1. Preheat the oven to 200°C (400°F).
  2. Cut the eggplants in half lengthwise and scoop out the flesh, leaving a shell about 1 cm thick. Chop the flesh and set aside.
  3. Heat the olive oil in a large pan over medium heat. Add the onion and garlic and cook until soft.
  4. Add the ground beef and cook until browned. Add the chopped eggplant and cook for a few more minutes.
  5. Add the tomato sauce, salt, and pepper. Simmer for 10 minutes.
  6. Fill the eggplant shells with the meat mixture and top with the grated cheese.
  7. Bake for 20-30 minutes, or until the cheese is golden and bubbly.
