Berenjenas Rellenas
Berenjenas Rellenas, or Stuffed Eggplants, is a classic Spanish dish. It's a delicious and hearty meal that's perfect for dinner.
Ingredients - Serves 4
- Cheese - 1 cup, grated
- Salt and pepper - To taste
- Tomato sauce - 1 cup
- Ground beef - 500 grams
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
- Eggplants - 2 large
Let's Get Started
- Preheat the oven to 200°C (400°F).
- Cut the eggplants in half lengthwise and scoop out the flesh, leaving a shell about 1 cm thick. Chop the flesh and set aside.
- Heat the olive oil in a large pan over medium heat. Add the onion and garlic and cook until soft.
- Add the ground beef and cook until browned. Add the chopped eggplant and cook for a few more minutes.
- Add the tomato sauce, salt, and pepper. Simmer for 10 minutes.
- Fill the eggplant shells with the meat mixture and top with the grated cheese.
- Bake for 20-30 minutes, or until the cheese is golden and bubbly.
