Beet Salad
This refreshing beet salad is made with roasted beets, mixed greens, goat cheese, and a tangy vinaigrette.
Ingredients - Serves 4
- Salt and pepper - To taste
- Honey - 1 teaspoon
- Dijon mustard - 1 teaspoon
- Olive oil - 2 tablespoons
- Balsamic vinegar - 2 tablespoons
- Red onion - 1/4 cup, thinly sliced
- Walnuts - 1/2 cup, chopped
- Goat cheese - 1/2 cup, crumbled
- Mixed greens - 4 cups
- Beets - 4 medium-sized, roasted and sliced
