Beet and Goat Cheese Terrine
This elegant Beet and Goat Cheese Terrine is a perfect appetizer for a dinner party. The earthy flavor of the beets pairs beautifully with the tangy goat cheese.
Ingredients - Serves 6
- Salt and pepper - To taste
- Fresh thyme - 1 teaspoon
- Lemon juice - 1 tablespoon
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Goat cheese - 200 grams
- Beets - 4 medium
Let's Get Started
- Preheat the oven to 400°F. Wrap the beets in foil and roast for about 1 hour, until tender. Let cool, then peel the beets and thinly slice them.
- In a bowl, mix the goat cheese with the garlic, olive oil, lemon juice, thyme, salt, and pepper.
- Line a loaf pan with plastic wrap. Arrange a layer of beet slices in the bottom of the pan, then spread a layer of the goat cheese mixture on top. Repeat the layers until all the beets and goat cheese are used, ending with a layer of beets.
- Cover the terrine with plastic wrap and refrigerate for at least 2 hours, or overnight.
- To serve, unmold the terrine onto a platter and remove the plastic wrap. Slice the terrine and serve.
