Beet and Goat Cheese Terrine

Let's Get Started

  1. Preheat the oven to 400°F. Wrap the beets in foil and roast for about 1 hour, until tender. Let cool, then peel the beets and thinly slice them.
  2. In a bowl, mix the goat cheese with the garlic, olive oil, lemon juice, thyme, salt, and pepper.
  3. Line a loaf pan with plastic wrap. Arrange a layer of beet slices in the bottom of the pan, then spread a layer of the goat cheese mixture on top. Repeat the layers until all the beets and goat cheese are used, ending with a layer of beets.
  4. Cover the terrine with plastic wrap and refrigerate for at least 2 hours, or overnight.
  5. To serve, unmold the terrine onto a platter and remove the plastic wrap. Slice the terrine and serve.
