Beer Soup
A traditional German soup that's hearty and delicious, perfect for a cold day.
Ingredients - Serves 4
- Salt and pepper - To taste
- Cheddar cheese - 1 cup, shredded
- Heavy cream - 1/2 cup
- Chicken broth - 2 cups
- Beer - 1 bottle, preferably a dark beer
- Flour - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Butter - 2 tablespoons
Let's Get Started
- Melt the butter in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
- Stir in the flour and cook for another minute.
- Slowly whisk in the beer, followed by the chicken broth. Bring to a simmer.
- Stir in the heavy cream and cheddar cheese, stirring until the cheese is melted.
- Season with salt and pepper to taste.
- Serve hot, garnished with extra shredded cheese if desired.
