Let's Get Started

  1. Preheat the oven to 325°F.
  2. Season the beef roast with salt and pepper.
  3. Heat a large oven-safe pot or Dutch oven over medium-high heat.
  4. Add the beef roast and sear on all sides until browned.
  5. Remove the beef roast from the pot and set aside.
  6. In the same pot, add the sliced onion and minced garlic. Cook until the onion is softened.
  7. Add the beef broth, soy sauce, Worcestershire sauce, dried thyme, salt, and pepper to the pot.
  8. Return the beef roast to the pot and bring the liquid to a simmer.
  9. Cover the pot and transfer it to the preheated oven.
  10. Cook for about 3 hours, or until the beef is tender and easily shreds with a fork.
  11. Remove the beef roast from the pot and let it rest for a few minutes.
  12. Slice the crusty bread rolls in half lengthwise.
  13. Place the sliced beef on one half of each roll.
  14. Serve the sandwiches with a side of the flavorful au jus for dipping.
