Pan Con Lechon
Pan con Lechon is a traditional Cuban sandwich made with slow-roasted pork, crusty bread, and tangy pickles.
Ingredients - Serves 4
- Pickles - 8 slices
- Mayonnaise - 4 tablespoons
- Mustard - 4 tablespoons
- Crusty bread rolls - 4
- Salt and pepper - To taste
- Oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Lime juice - 1/4 cup
- Orange juice - 1 cup
- Garlic - 4 cloves, minced
- Pork shoulder - 2 pounds
Let's Get Started
- Preheat the oven to 325°F.
- In a bowl, combine the minced garlic, orange juice, lime juice, cumin, oregano, salt, and pepper to make a marinade.
- Place the pork shoulder in a roasting pan and pour the marinade over it. Cover the pan with foil.
- Roast the pork in the preheated oven for about 4 hours, or until it is tender and easily shreds with a fork.
- Remove the pork from the oven and let it rest for 10 minutes. Then, shred the pork using two forks.
- Slice the crusty bread rolls in half lengthwise.
- Spread mustard on one half of each roll and mayonnaise on the other half.
- Layer the shredded pork and pickles on the bottom half of each roll.
- Close the sandwiches and press them lightly.
- Serve the Pan con Lechon sandwiches warm and enjoy!
