Beef Chow Fun
Beef Chow Fun is a staple Cantonese dish, made from stir-frying beef, wide rice noodles, scallions, ginger, bean sprouts and dark soy sauce.
Ingredients - Serves 4
- Vegetable oil - 2 tablespoons
- Ginger - 1 inch piece, minced
- Garlic - 2 cloves, minced
- Scallions - 2, cut into 1-inch pieces
- Bean sprouts - 1 cup
- Water - 2 tablespoons
- Cornstarch - 1 teaspoon
- Sugar - 1 teaspoon
- Oyster sauce - 1 tablespoon
- Light soy sauce - 1 tablespoon
- Dark soy sauce - 2 tablespoons
- Rice noodles - 1 pound, wide
- Beef sirloin - 1/2 pound, thinly sliced
Let's Get Started
- Marinate the beef with the cornstarch, 1 tablespoon of dark soy sauce, and water. Set aside for 15 minutes.
- Soak the rice noodles in hot water until they become soft, then drain.
- Heat 1 tablespoon of oil in a wok or large frying pan over high heat. Add the beef and stir-fry until it is fully cooked. Remove the beef from the wok and set aside.
- In the same wok, add the remaining oil, garlic, and ginger. Stir-fry for 1 minute.
- Add the rice noodles, remaining dark soy sauce, light soy sauce, oyster sauce, and sugar. Stir-fry for 2-3 minutes.
- Add the bean sprouts and scallions. Stir-fry for another 2 minutes.
- Return the beef to the wok and mix well. Cook for another 2 minutes.
- Serve hot.
