Beef and Onion Stew
A hearty and comforting stew made with tender beef and caramelized onions.
Ingredients - Serves 6
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Bay leaf - 1
- Potatoes - 2 large, peeled and diced
- Carrots - 2, peeled and sliced
- Beef broth - 4 cups
- Garlic - 3 cloves, minced
- Onions - 2 large, thinly sliced
- Beef chuck roast - 2 pounds, cut into chunks
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the beef and cook until browned on all sides. Remove from the pot and set aside.
- In the same pot, add the onions and cook until caramelized, about 10 minutes.
- Add the garlic and cook for another minute.
- Return the beef to the pot and add the beef broth, carrots, potatoes, bay leaf, salt, and pepper.
- Bring to a boil, then reduce the heat and simmer for 2 hours, or until the beef is tender.
- Remove the bay leaf before serving.
